Replacing refined sugar with honey is often described as a major health transformation.

The reality is more balanced.

Both honey and table sugar contain simple sugars and contribute calories. Honey should not be treated as an unlimited "healthy" food simply because it is natural.

However, the two are not identical.

Honey contains naturally occurring sugars along with water, trace plant compounds and aromatic substances that give it flavour beyond sweetness. Because its taste can be stronger and more complex, many people find that a smaller quantity is sufficient in tea, dressings or everyday recipes.

Honey also behaves differently in cooking. It adds moisture, promotes browning and can create a softer texture in baked goods. Since it is sweeter than table sugar by weight, recipes often require adjustment rather than a direct one-to-one replacement.

When substituting honey in baking, you may need to reduce other liquids slightly and lower the oven temperature because honey browns faster.
