A spoonful of honey in hot tea is a comforting ritual for many of us. Whether it's stirred into warm milk, drizzled over breakfast, or added to your favourite recipes, honey is incredibly versatile. But have you ever wondered if temperature affects its quality?

The answer is yes.

If you enjoy premium, minimally processed honey, the way you use it can make a noticeable difference to its flavour and character.

Inside a beehive, honey naturally exists in a warm yet stable environment. When honey is exposed to very high temperatures for extended periods, some of its delicate floral aromas can become less pronounced. Heat may also reduce the activity of certain naturally occurring enzymes that contribute to the unique character of minimally processed honey.

This doesn't mean that adding honey to a hot drink suddenly makes it "bad." It simply means that excessive heat can reduce some of the qualities that make premium honey so enjoyable in the first place.
